AquaFaba Oatmeal-Cherry-White Chocolate Pan (Cake)
Meringue
½ Cup of Aquafaba ( chickpea Liquid )
¼ Cup Raw sugar
Pinch of Salt
¼ Tsp Cream of Tartar
** Beat until frothy and set aside
Flax Egg
2 Tbsps ground flax Seeds
4 Tbsps Water
⅛ tsp Black Salt
⅛ Tsp Turmeric
Pinch of black pepper
** Place in a jar and let sit for 10 -15 minutes
Plant-Based Butter Milk
1 ½ Cup Plant-based Milk
2 Tbsp Apple Cider Vinegar
⅛ tsp Salt
1 tsp Lemon Extract
**Place everything in a glass jar and let sit for 10-15 minutes
Batter
2 Cups Old Fashioned Rolled Oats
1 ½ Cups Brown Rice Flour
2 Tsps Vanilla Powder
1 Tsp Baking Powder
½ Tsp Baking Soda
Add Ins
5 oz dried fruit
½ cup chocolate chips
** Sift into a large bowl, add flax egg, plant-based buttermilk stir until well incorporated. Gently fold meringue into dry ingredients. Now gently fold in dried fruit and chocolate chips.
Bake at 350 Degrees for 35 - 40 minutes or until a toothpick inserted comes out clean.
If making PanCakes , pour ½ Cup of batter into a non stick pan and cover with a lid and let stem cook for 2-3 minutes on low-medium heat
Flip pancake and cook the same way for 1-2 minutes.
Makes 6-8 PanCakes or 4 Single Serve Cakes in a springform pan.
