Chayote Chilaquiles

1 medium size chayote, peeled and cubed

2 cups diced mushrooms

1 cup diced onion

1 Cup Vegetable Stock

1 can black beans, drained and rinsed

2 tablespoons garlic

1 tablespoon ground cumin

2 diced chipotle peppers in Adobe

1/2 Cup Nutritional yeast

2 Cups Favorite Vegan cheese sauce

1 cup Unsweetened plant-based milk


Saute in 1 cup vegetable stock chayote, onions and mushrooms for 10 minutes on medium heat. Lower heat to low add black beans and chipotle peppers and cook for 25 minutes or until chayote is very soft. Add cheese sauce and plant-based milk simmer uncovered for 10 minutes add thick tortilla chips. Combine well and serve immediately. Top qith favorite toppings.
