Mexican Rice

Ingredients

- 2 cups of white rice make sure to rinsed 2 -3 times until the water runs clear

- 1/2 cup of diced onions

- 1/2 cup of diced tomatoes

- 1 cup of diced cilantro

- 2 tablespoons of tomato paste

- 1 tablespoon of your preferred salt

- 2 tsps of ground cumin

- 1 tsp of smoked paprika

- 1 tablespoon of minced garlic

- 4 cups of water or vegetable broth


Instructions

To start, rinse the white rice 2-3 times until the water runs clear. Next, add rice and all seasonings into a stock pot. Stir together and let it toast for 5 minutes on medium high heat. Once everything is lightly toasted add the broth and stir to make sure everything is well incorporated. Bring it to a boil and then turn down the heat to minim for 15 minutes. Make sure the broth is absorbed, once it is turn off the heat and let it sit for 10 minutes. Fluff with a fork and enjoy!
