Plantain oatmeal waffles

3 cups very ripe plantains

1 cup oatmeal flour

1 cup old fashioned rolled oats

1 cup polenta

2 cups plant-based milk

2 Tablespoons hemp hearts

2 Tablespoons ground flax seeds

1 tsp salt

2 Tablespoons nut butter - optional


Place plantains, milk, oat flour, hemp hearts, flax seeds and salt in a blender and blend until smooth. Transfer to a large bowl and add polenta and rolled oats. Let sit as your waffle maker heats up.

Cook according to your waffle maker.

Makes 6-8 waffles
