Vegan Lasagna

lb beyond sausage

1 cup diced yellow onion

1 can of tomato paste , no sugar

1 large can crush tomatoes or jar of favorite pasta sauce, no sugar in the ingredients or 3 cups diced tomatoes

1 Tbsp italian seasoning mix

4 garlic cloves, minced

2 Tbsp Balsamic Vinegar

2-3 cups vegetable stock or water

Salt

Pepper

1 cup per layer favorite vegetable, mushrooms, spinach

16 oz of favorite vegan cheese, mix with 1 tbsp Italian seasoning

1 box lasagna noodles, egg free - sugar free


In a large stock pot add 1/2 liquid When it begins to simmer add your onions. Cook for 3 to 5 minutes until onions become translucent, add tomatoes, garlic and seasonings. Cook for 5 minutes, add the meat and sausage plus the remaining liquid. Cook 25 to 30 minutes on medium low, ( mix the cheese with seasoning and set aside for later use) add balsamic vinegar reduce to low. Preheat oven 375° and set up your layering station.

Remove sauce from heat.

Ladded sauce to bottom of baking pan, add noodles, cheese mixture, ( vegetables ) meat sauce and repeat until you have 3 layers. Bake for 40 to 45 minutes. Let set for 20 minutes. Freezes wonderfully. Enjoy
