2 1/2 cups - Annie's Organic pancak and waffle mix
12 oz Soft Tofu
1/2 cup water
3 Tbsps Fresh lemon juice
1 Tbsp Lemon Zest
1 tsp Organic " Food Grade" Lavender
1 Tbsp Flavorless oil, ( I tried making it without oil and I was not successful )
1 Tbsp Vanilla Infused Maple Syrup , regular Maple Syrup will work
1 Tsp Vanilla Powder
Place everything, except pancake mix, in a blender. Once everything is blended smoothly pour into a large bowl and add pancake mix. Blend well. Let sit for 5 minutes
Cook on low , these take a few minutes longer than regular pancakes.
Serve with favorite syrup
I heated up Organic orange marmalade and added 1 tsp of water per tablespoon of marmalade.
